A lot of the time, I get sad looks from people when they ask what I’m eating for lunch or dinner and I reply “veggies and lentils”. That combo, with a carb thrown in, is one of my favorites! What’s more comforting than a spiced lentil dish on a cold fall night? In the summer, I want something that I can cook outside though! Enter this dish. Thyme Roasted Carrots with Herbed Lentils 1 can green or du puy lentils 10 carrots, peeled goat feta, crumbled 1 tablespoon hummus 1 tablespoon tatziki (I make mine using Happy Days goat yogurt) milk or olive oil (to thin tatziki if you want) thyme, oregano, salt, pepper, lemon juice, dill optional: soft pita This dish is super easy. I’ve been getting some questions ever since my March Favorites (and some “where’s the butter” comments to my insta-stories) regarding my revamped “nutritional guidelines” (apparently it’s not a diet). Some people have noticed that I’ve appeared to have lost weight and other have just noticed that the food I’m talking about is much more healthful. My weightloss has been the result of diet changes I’ve been making (or my die-t as my mum has coined it… since it cuts out most things I love). The first thing I’d like to say is that the changes to my lifestyle are at the recommendation of a dietitian and my doctor. Everything is supervised. Hey guys! I wanted to start something new where I can kind of “round up” all of the little things from the past little while that maybe didn’t make it to the blog as a full post, but are fun none-the-less. Last week I had Monday off (as part of an extended Canada Day break from work), and then I went back to work FULL TIME! I’ve been working part time and love my job, and as of last Tuesday, I’m a full time member of the team. It’s been swelteringly hot in Edmonton the past week or so, so I’ve been hiding in my parent’s basement and neglecting my own house. It needs cleaned and aired out! I’m a sucker for Italian food. I love eating it, I love making it… so when my mom invited me to go to a risotto making course put on by the Sorrentino’s Restaurant Group last year, I was totally game. It was honestly an easy sell. But when she started to insist that I take a Basic Knife Skills course put on by the Sorrentino’s Group, I was a little bit less psyched. A. My chopping was truly not that horrific. I’ve never sliced and diced myself and I cook a lot. B. I was unconvinced that it would be that fun… it seemed like a very academic course to be taking. I was wrong. Hey! The other day I was totally jonesing for pizza BUT I didn’t have any traditional pizza fixings and I wasn’t about to pay for one (even though I live right next to an amazing pizzeria). So I kinda scrounged around in my freezer and fridge and came up with this! This is 100% not an affordable meal at a whopping $5.89 (yes, nearly 2$ more than I try to spend per day!), but it was delicious and pre-jobloss so I felt okay about it at the time. This is also a much more healthy option as the flatbread I used was actually a Flatout protein flatbread, which is super healthy when compared to other options. I priced this out using a PC Collection flatbread from Superstore, though, in case the flatouts are not available in your area. But, it’s worth checking it out to see if they are because…

Anyone who follows me on Instagram probably remembers this little snap of a salad I whipped up the other day, which was just too delicious to not share. This isn’t a cheap dinner, but it sure was delicious. For a less hungry person, this could serve two, but I kept it as a single serving on price since that’s how I ate it. Beets and Greens Salad $3.23 per serving ~1 Large Beet- $0.57 ~1/3 of a large container of mixed greens – $1.46 ~1/8 of a large container of feta- $0.88 1/3 of a can of cannellini beans- $0.32 Pantry Staples for dressing- olive oil, lemon juice, dijon mustard, salt and pepper (remember to salt and pepper liberally since the beans etc are a very blank slate.
