This is 100% not an affordable meal at a whopping $5.89 (yes, nearly 2$ more than I try to spend per day!), but it was delicious and pre-jobloss so I felt okay about it at the time. This is also a much more healthy option as the flatbread I used was actually a Flatout protein flatbread, which is super healthy when compared to other options. I’m all about giving credit where credit is due- this recipe was 100% my mum’s brainchild. She likes to call it “Use Up Pasta”, she literally puts everything but the kitchen sink in terms of delicious vegetables in it. Whatever is lying around is fair game. Hello! This post is an example of how to turn a few strips of leftover steak into an amazing meal that feels both light and satisfying. In the summer I just love salads, meal salads, and will take any excuse to make one! I’m currently trying to grow lettuce outside my front door, but I’m not having too much luck sadly. That said, you can grab 6 heads of lettuce right now for $4.98 and go wild! That’s what I had done when I made this salad. Yes, this meal is just 47 cents off of what I try to eat for on a daily basis, but every now and again a (still affordable) treat should be had. It really shouldn’t be such a surprise that I’m so into paella that it’s my new favorite thing… it’s like Spanish risotto (only easier, hallelujah, because you just deglaze the pan and then add all of the liquid) and you just can’t go wrong with risotto. I’m calling this paella-ish because I’m sure I didn’t make this traditionally and that some true experts will find flaws in my execution, but at the end of the day this was as good as the paella I had out at a restaurant recently. I love the smokey, rich flavor that is present without the use of heavy oils, butters or cheeses. Anyone who follows me on Instagram probably remembers this little snap of a salad I whipped up the other day, which was just too delicious to not share. This isn’t a cheap dinner, but it sure was delicious. For a less hungry person, this could serve two, but I kept it as a single serving on price since that’s how I ate it. This was a quick and easy meal that I made one night when I combined a side dish my mum makes with some yummy fried eggs. Life is hectic these days between work, work, studying, still unpacking (because I’m editing things out, okay!?) and slowly dipping my toes back into the dating world. While I’m not exactly a serial dater, I have gone on a few dates of late, one of which was a date night hosted at my place. I’d love to have leisurely weekend dates, but when you also work on the weekend it can be tough, and dates get moved to work nights. This is NOT an affordable meal post. It’s just not.
