Hey guys! Recently I came down with a sinus infection and got thrown on a hefty dose of penicillin. I know, this seems to have nothing useful to add to a recipe about sugar-free yogurt parfaits but here’s the link- antibiotics can do a number on your tummy health. Greek yogurt (or any yogurt with healthy bacteria) can aid in rebalancing the healthy bacteria levels in your stomach. Also, I personally have a hard time dealing with too much refined sugar in my diet, so having natural sugars as opposed to a sugared yogurt parfait from a store is very, very important to me (even though there are SO many delicious store bought options out there). This recipe has peaches, a raspberry coulis, granola and vanilla greek yogurt and not a grain of added sugar. I use honey to thicken the raspberry sauce and it keeps it tart, which…

Hi Guys! I hope the first week of 2017 is going well for you! Since this time of year is often when we want to focus on health and weight loss goals, I wanted to share my favorite salad of late! This is inspired by a salad my family had out for dinner one night (I wasn’t there) at a restaurant, that my mum then tweaked to her preferences and I am in LOVE. This salad is so stinking simple, and while it has cheese, it’s a small amount that feels decadent because you’re literally just shaving it in. This is fast to make but delicious and a total show stopper- and is SO affordable for a salad this time of year! I posted the picture below right after Christmas and people were liking it like crazy- so I knew I wanted to share with you. Tomato Basil Salad with…

Hey guys! I hope that you had the merriest Christmas and are looking forward to an awesome 2017. If you’re like me, you may be teetering on the edge of “turkey’d out” for the season and ready to eat something a bit different. This recipe is similar to my regular puttanesca, which I’ve blogged about eating before with zucchini noodles! The difference in this case is that I eat it with spaghetti squash, and mix in a can of tuna for an extra bit of protein. I love tinned tuna for its affordability and am always looking for new ways to incorporate it into my meals about once a week. This recipe is easy and so, so quick. No standing over a stove for 2 hours- just make your sauce while your spaghetti squash roasts and keep it warm! Tuna Puttanesca with Spaghetti Squash Serves four for $7.56, or $1.89 per serving…

Hey! Today I wanted to share a super easy plant-based dish that is vegetarian but can be made fully vegan by omitting the eggs. This is pretty hearty so I’m not sure that even the most dedicated meat eater would want to add meat, though. But you do whatever makes you happy! Lentils with Kale and Mushrooms Serves eight for $9.22 or $1.15 per serving 2 cups of dried lentils -$1.32 1 package of sliced mushrooms – $3.34 Shredded zuchini- $0.78 1 bundle to 2 bundles of kale (or frozen kale) – $1.97 Chili Flakes, garlic, thyme, salt and pepper, olive oil *optional add on- 1-2 eggs per serving (as pictured) – $1.81 Cooking your lentils is easy- just follow the instructions on the package! While they cook in a pot, put your mushrooms in a pan with thyme, chili flakes, pepper, garlic (minced) and a small amount of olive oil.…

Anyone who follows me on Instagram probably remembers this little snap of a salad I whipped up the other day, which was just too delicious to not share. This isn’t a cheap dinner, but it sure was delicious. For a less hungry person, this could serve two, but I kept it as a single serving on price since that’s how I ate it. Beets and Greens Salad $3.23 per serving ~1 Large Beet- $0.57 ~1/3 of a large container of mixed greens – $1.46 ~1/8 of a large container of feta- $0.88 1/3 of a can of cannellini beans- $0.32 Pantry Staples for dressing- olive oil, lemon juice, dijon mustard, salt and pepper (remember to salt and pepper liberally since the beans etc are a very blank slate. Go harder on the pepper and lighter on the salt due to the feta.) Start off by washing your lettuce and using…
