A lot of the time, I get sad looks from people when they ask what I’m eating for lunch or dinner and I reply “veggies and lentils”. That combo, with a carb thrown in, is one of my favorites! What’s more comforting than a spiced lentil dish on a cold fall night?

In the summer, I want something that I can cook outside though! Enter this dish.

Thyme Roasted Carrots with Herbed Lentils

1 can green or du puy lentils

10 carrots, peeled

goat feta, crumbled

1 tablespoon hummus

1 tablespoon tatziki (I make mine using Happy Days goat yogurt)

milk or olive oil (to thin tatziki if you want)

thyme, oregano, salt, pepper, lemon juice, dill

optional: soft pita

This dish is super easy. I will either roast my carrots in the oven or in the bbq, if it’s the oven I roast at 415 degrees so they caramelize. I just drizzle them with olive oil, season with salt and pepper, and add either dry or fresh thyme. Since I have don’t have thyme growing at home now, I use dried.

Those take about 30 minutes to finish (this will depend greatly on how fresh your carrots are and what size they are). While they’re cooking, drain and rinse your lentils and toss in a bowl with sea salt, pepper, and nice olive oil. Sometimes I’ll add zaatar as well.

Put down a bed of your spiced lentils in a shallow bowl, add your roasted carrots, add a heap of hummus and tatziki, sprinkle with goat feta and lots of dill. If I’m feeling like it, I’ll also add a bunch of fresh spinach, or some rice if my carb needs are higher (I’m not currently eating pita). Note: if you want your tatziki to almost “drizzle” on your bowl for even distribution, thin it out with a bit of milk or olive oil.
