I know, this is a terribly grandma-ish thing to be writing about BUT spring cleaning is just one of those adult things that I feel like our parents took care of and often-times even though the kids helped, we didn’t always learn how to do everything, or in the correct order. The change that you’ve been seeing since last week was a months-long labor of love finding the right user interface and doing the back end work necessary to whip this little corner of the internet into a space that can grow with me now that more people are checking out what’s going on here. Hey guys! There’s just something about spring that I love. Maybe it’s that the sun is out longer, or more birds in the trees, or just bright green everywhere, but I love it! Here in Edmonton it’s still snowing periodically, but you can feel spring coming still. The sun is warm now, melting snow and ice to make way for green grass and tree buds in April and May. This was a quick and easy meal that I made one night when I combined a side dish my mum makes with some yummy fried eggs. It’s decently affordable, but as anyone up here in the GWN knows, veggies don’t really go down in price until summer is in full swing. At a price tag of nearly three dollars per person, this is a luxury meal in my book.
