Hey guys! Welcome to the first food post I’ve worked on since I got told I needed to eat differently- Salmon Cake Salad. I’d been struggling a bit with what to eat and how to eat after being told my diet could help control symptoms of inflammation (more about what’s been going on for me in an upcoming post), but these salmon cakes and the accompanying salad was the first time I sat down and ate and felt like “Ok, this is going to be ok.” For me, food is a major source of joy. There’s a food for every situation and you can celebrate with food, comfort with food, gift with food and receive love with food… It’s the best. Hey guys! So you’ve seen me talk about my love of tacos a few times on this blog- my fish tacos are a favorite to host dinner with friends and my pork tacos are the perfect slow-cooker treat. But I’ve never talked about my favorite taco spices or my favorite side dish to have when I’m having a taco night! Believe it or not… it’s probably not the healthiest to eat just tacos. It’s not the worst, but it’s good to make a salad. My sister made us this corn salad last time we had taco night together and it was perfect. Unlike a lot of corn salads which have raw onion and/or garlic, this recipe has fresh and cooked elements which makes it a little special by my mind. Well, I made it around a month. Not my best but… there were 3$ pints of strawberries that I just couldn’t deny myself. I also really wanted fresh dairy. So after thirty days of not buying groceries, I bought a few things. This no-buy isn’t firmly over, I’m still trying to work out of the meals and proteins I have frozen and my shelf stable items, but I’m running out of things like eggs and in my house… that just won’t do. March was a pretty easy month to not be buying groceries. I had a hospitality suite at work for three days and lots of invites out to my family’s place.
