Enter this healthy Mexican-inspired quinoa bowl. It’s loaded with healthy fibre, fats, and protein, so you can feel good about stuffing your face with this one! Hey Guys! I was strolling through Sobeys the other day with my mom when she called me over to tell me about how good of a price the pork shoulders were. She was right, and the butcher assisted us with picking one out for me, which cost a whopping seven dollars. Hey! Fish tacos are 100% one of my favorite indulgences in life. The crisp lettuce, spicy fish, cool and creamy avocado-lime crema and bright pico de gallo… it’s all so, so good. Plus, it’s actually pretty healthy (if you can force yourself to eat in moderation). I have to start this post apologizing for the shoddy quality of these pictures- I try to only post things if the pictures are at least decent, and these were taken when my phone was on its last legs. That being said, I REALLY wanted to share this post because it is such an easy way to stretch a buck and make amazing comfort food at the same time. Great idea+bad pictures= kindof ok to post, right? Hey! This recipe was born on one of those days where I was like, I want nothing to do with cooking, but I am STARVING and feed me now. I keep a lot of seemingly random things in my freezer, including chicken breasts, pre-sauteed peppers and onions, tortillas… you see where this was going, right?! Rather than being a true recipe post, this is more of an example of how doing some pre-work and keeping your freezer well stocked will save you the money and hassle of having to eat out. This post is inspired by Clinton Kelly’s “Breakfast Beans and Rice” from a recent episode of The Chew. The Chew is one of those shows I just love to watch when I’m at my parents (they have alllll the TV channels) and my mum is especially careful to save me the episodes when they are doing specials on how to stretch a buck!
